Our work is a promise of authenticity.

Biagio and Nicola Di Girolamo lead their team with passionate dedication to their work and deep respect for nature, supporting certified organic viticulture for at least 20 years.

The meticulous process of organic production starts from the peculiar choice of land free from any form of contamination, organic fertilization, absence of herbicides and the exclusive use of copper and sulfur.

Quality and product safety are indispensable concepts for us. Even in the cellar, we use only plant-based proteins for filtering before bottling.

The certifications Organic and Vegan are proof of our deep commitment to our entire production line and the indispensable value of transparency towards our customers.

Terroir

Land as source of Wealth.

Our 120 hectares of vineyards are located in the southwest of Sicily, between Trapani and Mazara del Vallo where the soil is composed mainly of loam.

The vineyards are placed at different altitudes above sea level and benefit from a Mediterranean climate.

The sun is present all year round giving hot summers with mild, short winters and allowing ideal conditions for viticulture. The favourable temperature along with the absence of frost prevents the vine from diseases and facilitates a perfect maturation of the crop. The sea, thanks to the lovely breeze, has a cooling effect, keeps the crop healthier and adds saltiness to the vines. The vineyards are placed at different altitudes, their positions allow the best expressions of our grape varieties.

Grillo and Inzolia are grown at sea level where they benefit from the same pleasant sapidity that can be found in the glass. Zibibbo, Catarratto, Perricone, and Nero d’Avola, on the other hand, are grown at 250 m a.s.l., where the temperature variation between day and night gives good acidity, which is excellent for making fresher and more aromatic wines.

The Value of Sustainability

Caring for the land is the first step in respecting ourselves.

In this commitment that guides every aspect of our winemaking activities, we consider not only the environmental impact of our actions but also the social and economic ones.

In our vineyards, as well as in the cellar, we work to reduce the waste of a precious resource like water. Thanks to the implementation of drip irrigation systems, we reduce water consumption by up to 50%, while in the cellar we optimize its use in cleaning processes.

We have reduced the weight of each glass bottle to minimize carbon emissions during transport and we use recyclable materials for the packaging.

In our plastic-free work environment, we make choices that are less harmful to the planet.

As evidence of commitment to our mission, we have obtained the VIVA certification – the program promoted by the Ministry of the Environment and Energy Security that encourages sustainability in the Italian wine market.
