Pumìe: Baglio Diar’s New Ancestral Method Rosé

There’s a new sparkling wine. It’s called Pumìe, and it’s our new ancestral method rosé made exclusively from Nocera grapes. A fresh, lively, and unconventional wine, created to accompany carefree moments of conviviality.

Following last year’s success of Lumìe, Baglio Diar’s first ancestral method sparkling wine, we wanted to continue this journey with a new interpretation. This time, the star is Nocera, a native Sicilian red grape variety that won us over with its aromatic freshness and unique character.
A variety that covers just 40 hectares in Sicily, but one we’ve decided to highlight with a single-varietal wine.

With Pumìe, we want to offer you a sparkling wine that’s different from the usual. More immediate, more spontaneous, and perfect even for those who aren’t wine experts.

But first, let’s do a quick review.

 

Ancestral method: what does it mean?

In recent years, we’ve been hearing about it more and more often. But what does it really mean?

It’s an ancient method of producing sparkling wines, dating back long before modern sparkling wine techniques. It’s a simple, natural system that follows the natural pace of fermentation without forcing it.

In the case of Pumìe, after a very gentle pressing of the grapes, fermentation takes place at a controlled temperature of 13 °C. Before this is complete, the wine is cooled to temporarily halt the yeast’s activity. It is then bottled, and fermentation resumes naturally in the bottle until completion.

It is precisely this process that creates its delicate bubbles and its authentic style.

Compared to a classic sparkling wine, a traditional method often has a softer, less aggressive effervescence. The palate is fresher, more direct, and very pleasant to drink.

 

Why is it called Pumìe?

If you know Baglio Diar well, you already know how much we love to tell the story of Sicily through the names of our labels.

“Pumu” means apple in Sicilian dialect. Pumìe was actually conceived as a play on words inspired by Lumìe, our first ancestral method wine.

Here too, the name evokes one of the main aromas you’ll find in the wine: ripe red apple. A delicate fragrance that accompanies the entire tasting experience alongside fruity and citrus notes.

 

A rosé that tells the story of Sicily

Pumìe is born in our vineyards in Mazara del Vallo, in southwestern Sicily. Here, the warm climate is balanced by the sea breeze, while the sandy soils help maintain the wine’s elegance and freshness.

The Nocera grapes are harvested during the nights of the second week of September. Nighttime harvesting is very important because it allows us to best preserve the aromas and acidity, fundamental characteristics for a sparkling wine like this.

After at least 5 months of aging in the bottle, Pumìe finally takes shape.

In the glass, it presents an intense light rosé color with violet hues; bright, lively, and decidedly inviting.

On the nose, delicate aromas of ripe red apple, raspberry, and light notes of rose emerge. On the palate, however, citrusy sensations of pink grapefruit and lime prevail, followed by fresh hints of basil and a lovely acidity that makes the wine smooth and dynamic.

It’s one of those wines that disappears from the glass all too quickly.

 

How to enjoy it best

It’s a versatile and very convivial wine. You can easily enjoy it on its own as an aperitif, perhaps during a summer evening or an outdoor lunch.

It also pairs very well with fried finger food, citrus-infused tuna tartare, stewed cod, or vegetable ratatouille.

Our recommendation is to serve it very chilled, around 4 °C, in a medium-sized tulip glass.
